Our leaders are Stephan Pyles and George Majdalani, whom together have over 60 years combined restaurant and hospitality expertise. They presently own two very unique concepts-Stephan Pyles and Stampede 66. They also have License Agreements that include Sky Canyon at Love Field and Dallas-Fort Worth International Airports and Sustenio at Hotel Eilan in San Antonio. 2013 marked Pyles’ 30th anniversary year in the restaurant business as chef and restaurateur whose famed Routh Street Cafe was named by Texas Monthly as one of the top 35 moments in Texas history in the past 40 years, and Pyles’ cuisine singlehandedly made Texas a contender on the global culinary scene. Majdalani and Chef Pyles first worked together to open the highly successful concept Star Canyon in 1994.
Stephan Pyles is consistently nominated for the James Beard Awards as Outstanding Chef in America and was the first Chef in the Southwest to win a James Beard Award for Best Regional Chef. Pyles is the founding father of Southwestern Cuisine and is known internationally as a pioneer of New American Cuisine. Chef Pyles is a founding board member of Share Our Strength, America’s largest private source of funding for hunger-relief, a life board member of The North Texas Food Bank and co-founder of The Dallas Hunger Link, Dallas’s perishable food program. He has awarded $200,000 in culinary scholarships in his name over the past 12 years.
Under the conceptual and culinary direction of Pyles, the menu features family recipes and New Texas classics. Stampede’s Honey Fried Chicken, based on Pyles’ grandmother’s recipe, has won D Magazine’s award for Best Fried Chicken in Dallas 2 years in a row.
